Speaker cable?

It depends on the cost and quality of your sound system and speakers, also the output of your amplifier. For very high spec equipment, they use gold coated cables with gold coated connecters. The Rule is, the thicker the core of cable the better (whatever the quality and output of your system) If you are not sure, just buy at least the same cable strand (core) as that which you have already, but if different, it must be thicker and not thiner.

0.5 mm two core cable (im not an electrician but iv'e used on 3 of my stereos and had no problems as their is not alot of voltage going through).

Yes there will be loads of different types of cable and trst me they do make one hell of a difference! However, if you just want something that will provide sound to your speakers then something cheap and cheerful will do and just get the right amount (length) and you will be good to go. Just do a rough measurement from where your stereo is to where the speakers are/going to be placed so you know roughly how much cable to get.

You could go to Radio Shack and see if you could find some type of splitter that would plug into the headphone jack that had 2 leads on. I know this doesn't make a lot of sence but what I'm trying to say is the one end would puug into where you would plug in the headphones and that the other end would have 2 wires that you could splice your speaker wire to.
