Where do you buy an audio-line in cable that will fit my Jensen iJam docking system as well as my zune?

A normal sized plug is called an 1/8 inch plug. The old large ones are called a ¼ inch. You want the stereo patch cord, not the mono. Or one with an 1/8 jack on one end and a plug on the other but you know the size plug or jack now anyways.

my new ipod wont charge on my new ipod dock...?

If you just bought the docking station new then obviously it would be able to support the new iPod Touch.
If it's not responding, maybe your iPod is having issues. But I think you should take this by priority:
Maybe call the number to speak to someone about the dock before trying to deal with the iPod.
Does the iPod respond to your computer?
Try plugging your iPod into others' docks: does it respond? If not, it's the iPod.
If it responds to others, then it might be a defective dock. It happens, and you'd just simply have to return it and get a new one.
Hope this helps. (:
